The majority of tallow is chemically processed, similar to seed oils, and the way it's processed significantly impacts its quality, composition, and overall performance. Understanding these processing differences is key when evaluating tallow products.

Understanding the difference

As interest in tallow continues to grow, it's important to understand that not all tallow is created equal. One of the most significant differences lies in how it is processed—specifically, whether it is refined, bleached, and deodorized (RBD), or left in its natural state as pure tallow.

The RBD process

RBD tallow undergoes a series of industrial chemical processing steps designed to create a more uniform and neutral product. These methods are commonly used in large-scale, mass production environments where consistency and high-volume output are prioritized. The RBD process assists with 'correcting' tallow that is off-color or beginning to degrade, making it suitable for broader use again. Refining removes natural components, bleaching alters the original color and composition, and deodorizing strips away the natural scent. The chemical steps involved can include: caustic soda (sodium hydroxide), phosphoric or citric acid degumming, bleaching clays, activated carbon, and high-heat deodorization. While these chemical processes allow for scalability and uniformity, they fundamentally change the tallow itself. What remains may appear consistent, but it is no longer tallow in its whole, original form.
